Chicken Kofta Pita Tacos
Grilled pita bread shaped into tacos and loaded with chicken koftas, fresh corn salsa and spicy mayo makes for a super moreish summer dinner perfect for your next BBQ!
Tips & Tricks
- For an extra punch of flavour and heat, add a handful of coriander, a diced red chilli & a squeeze of lime juice to your corn salsa!
- Add sliced avocado.
Ingredients
- 1 – 2 cobs of corn, shucked
- 1 pack Pams Chicken Koftas
- 5 Pams White Pita Breads
- ½ cup Pams Peri Peri Mayonnaise
- 10 Pams Cherry Tomatoes, diced
- 1 small Pams Red Onion, finely diced
Method
- Place the shucked corn and the chicken koftas on the BBQ over a medium heat. Cook for around 15 minutes, turning regularly for even cooking, until golden brown and cooked through.
- Slice the kernels off the corn cob and place in a bowl with the diced tomatoes and red onion. Add a splash of oil, season with salt & pepper and toss to combine.
- Grill the pita breads for a couple of minutes until lightly toasted, then shape and curl into a taco. Stuff each pita-taco with a chicken kofta, a large spoonful of charred corn salsa and a drizzle of peri peri mayonnaise.
