Feijoa Loaf
Make the most of the feijoa abundance and whip up this super easy and fruity loaf. Warm and fluffy baking always makes for the ultimate seasonal snack.
Tips & Tricks
- For extra flavour, add 1 tsp mixed spice to your loaf batter at the same time as adding the flour!
- Peel and slice the remaining 2 feijoas once you have made your loaf mixture to prevent them from browning while you do your mixing!
Ingredients
80g Pams Pure Butter, softened at room temperature
6 large feijoas (about 480g whole, unpeeled feijoas)
1 cup Pams Caster Sugar
1 tsp Pams Baking Soda
2 Pams Eggs, beaten
2 and ¼ cups Pams Self Raising Flour, sieved
Method
- Preheat the oven to 160°C bake.
- Peel and dice 4 feijoas, and peel and slice the other 2 feijoas.
- In a large saucepan over medium heat, add the butter, sugar and the peeled and diced feijoas. Add ¼ cup water and stir to combine, then bring to a simmer for 5 minutes to melt everything together.
- Take the mixture off the heat and add the baking soda (it will foam). Leave the mixture to cool for around 5 minutes.
- Add the beaten eggs to the cooled feijoa mixture and mix to combine.
- In a large bowl, add the flour and make a well in the centre. Pour in the cooled feijoa mixture and gently fold together to combine.
- Add the mixture to a greased and lined loaf tin. Gently press in the peeled and sliced feijoas on top of the loaf batter.
- Bake for 50 minutes, or until a toothpick inserted in the loaf comes out clean. Leave to cool slightly before turning out of tin. Slice and enjoy.
