Kiwi, Chia & Granola Parfait
Minimise the morning mayhem and prep this breakfast parfait the night before. Sweet, moreish, and deliciously fruity - it’ll have you jumping right out of bed!
Tips & Tricks
- We love using any other fresh fruit and berries we have on hand. Try it with slices of banana and a sprinkling of desiccated coconut!
Ingredients
- 1/2 cup Pams Superfoods Black Chia Seeds
- 2 cups Pams Coconut Milk
- 2 Tbsp Pams Finest Maple Syrup
- ½ cup fresh raspberries or Pams Frozen Raspberries, defrosted
- 4 Pams Kiwifruit
- 1 ½ cups Pams Almond & Cashew Granola
Method
- In a mixing bowl or container combine the chia seeds, coconut milk and maple syrup and mix to combine. Cover and refrigerate overnight or for at least 1 hour to set.
- Peel and dice three kiwifruit into small pieces. Peel and slice the remaining kiwifruit into rounds.
- To make the parfaits, add a couple of spoonfuls of chopped kiwi fruit to the bottom of a tall glass and top with a layer of chia pudding and a layer of raspberries. Add about 4 sliced kiwifruit rounds to each glass and press up against the edges. Fill with a layer of granola. Repeat the layers again – chopped kiwifruit, chia pudding, raspberries and finish with a generous layer of granola. Repeat with remaining 3 glasses.
