Muffin Tin Taco Cups

Turn your Pams Jumbo Tortillas into mini crispy taco bowls to stuff with all your favourite taco fillings. The perfect dinner, lunch or after-school snack! 🌮

Tips & Tricks
  • Top with your favourite taco toppings like Pams Tex Mex 3 Cheese Blend, shredded Pams Iceberg Lettuce & sour cream.
  • This recipe also works great with mince in place of the lentils!

Ingredients

  • 3 Pams Jumbo Tortillas, cut in half
  • 1 pack Pams Burrito Mexican Spice Mix
  • 1 tin Pams Brown Lentils, drained & rinsed
  • 1 tin Pams Kidney Beans, drained & rinsed
  • 1 tin Pams Diced Tomatoes with Garlic & Oregano
  • 1 tub Pams Classic Guacamole

Method

  1. Fold each tortilla half into a cone, then gently flatten the bottom to form a cup before pressing into a Pams Jumbo Muffin Tin. Brush or spray lightly with oil and place in the oven to bake at 200°C for 10 minutes, until crisp and golden.
  2. While the taco cups are in the oven, add a splash of oil to a large frypan over medium heat. Add the kidney beans, lentils and burrito spice mix and fry until fragrant. Add the tomatoes and simmer for 5 minutes until thickened.
  3. Fill the crispy taco cups with the tomato and bean mixture and top with a dollop of guacamole.
