One Pan Fish Tikka Masala
Nothing beats a good curry! This easy, one-pan tikka masala is packed with flavour and insanely easy to whip up using Pams Natural Fish Fillets.
Tips & Tricks
- Serve with a drizzle of natural yoghurt & a sprinkle of fresh coriander or mint!
- Pan fry your fish before adding to the dish for extra colour and flavour.
- This recipe works well with any firm white fish fillets!
Ingredients
- 4-6 fillets of Pams Natural White Fish Fillets, defrosted
- ½ jar Pams Tikka Masala Simmer Sauce
- 1 ¼ cups Pams Basmati Rice
- 2 Tbsp Pams Crushed Garlic
- ¾ cup Pams Frozen Peas
- 2 handfuls Pams Baby Spinach
Method
- Place the fish fillets on a shallow dish and drizzle over 2 tablespoons of the simmer sauce. Season with salt and pepper and toss to coat. Set aside.
- Add a splash of oil to a large fry pan over medium heat. Add the rice and garlic and cook for a couple of minutes until glossy and fragrant. Season with salt and pepper. Pour over 2 cups of water and bring to the boil. Cover with a lid, turn the heat down to low and leave to simmer for 12 minutes, until the rice is almost cooked.
- Remove the lid and stir through the peas, baby spinach, remaining simmer sauce and ½ cup of hot water. Layer the fish on top, re-cover and cook for a further 7 minutes until the fish and rice is cooked through.
