Sausage & Broccoli Spaghetti Frittata
For a creative way to use up leftover pasta, this frittata makes a foolproof lunch or dinner that the whole family will love!
Tips & Tricks
- For added flavour, sauté a clove of diced garlic and ½ a diced onion in your pan before adding the sausage!
- You can use any type of leftover pasta in this recipe!
Ingredients
- 2 – 3 pork sausages, casings removed
- 1 head broccoli, cut into florets
- 4 cups leftover spaghetti
- ½ cup Pams Grated Tasty Cheese
- 2 cups Pams Baby Spinach
- 5 x Pams Free Range Eggs, whisked
Method
- Heat a splash of oil in a frypan over medium-high heat. Add the sausage and use the back of a wooden spoon to break them up into pieces as it browns in the pan.
- Add the broccoli and continue cooking until just tender. Season with salt and pepper and transfer to a large mixing bowl.
- Add your leftover spaghetti, grated cheese, baby spinach and whisked eggs to the bowl. Toss until everything is well combined and coated in the egg mixture. Transfer to a greased baking dish or cast-iron skillet.
- Bake in the oven at 180°C for 25 - 30 minutes or until cooked through, with the spaghetti starting to turn golden on top. Leave to cool slightly before slicing into wedges and serving.
