Strawberry Ice Block
It can be tricky keeping the kids entertained over summer as the days are longer and the school holidays drag on. Let’s make a fun recipe for DIY ice blocks that gets the kids involved and makes use of seasonal fruit.

- 1/2 pack Pams frozen strawberries
- 1/2 cup Pams caster sugar
- Juice of 1 large lemon (1/4 cup juice)
- 1 1/2 cups cold water
- 12 popsicle sticks
- 12-hole Ice Block Mould
Method
- Let the frozen strawberries defrost for 10 minutes at room temperature, then slice 5mm.
- Meanwhile, combine the sugar, lemon juice and water together in a jug, whisking to dissolve the sugar.
- Place the slices of strawberry into the ice block moulds, then pour over the lemon sugar liquid up to the top of the moulds.
- Place into the freezer for at least 5 hours, or until completely frozen.
- Run the moulds briefly under warm running water, before removing from the mould.
- Store in an airtight snap lock bag or container in the freezer.
