Strawberry Ice Block

It can be tricky keeping the kids entertained over summer as the days are longer and the school holidays drag on. Let’s make a fun recipe for DIY ice blocks that gets the kids involved and makes use of seasonal fruit.

Ingredients

  • 1/2 pack Pams frozen strawberries
  • 1/2 cup Pams caster sugar
  • Juice of 1 large lemon (1/4 cup juice)
  • 1 1/2 cups cold water
  • 12 popsicle sticks
  • 12-hole Ice Block Mould

Method

  1. Let the frozen strawberries defrost for 10 minutes at room temperature, then slice 5mm.
  2. Meanwhile, combine the sugar, lemon juice and water together in a jug, whisking to dissolve the sugar.
  3. Place the slices of strawberry into the ice block moulds, then pour over the lemon sugar liquid up to the top of the moulds.
  4. Place into the freezer for at least 5 hours, or until completely frozen.
  5. Run the moulds briefly under warm running water, before removing from the mould.
  6. Store in an airtight snap lock bag or container in the freezer.
