Honey Soy BBQ Chicken & Rice Salad
Quick, super simple, and equally delicious. These sweet & sticky drumsticks on rice salad will be the hero of your mid-week mayhem – get your whānau ready for a new staple weeknight dinner. For a fuss-free alternative, you can even use a couple pouches of Pams Jasmine Instant Rice!

Ingredients
- 8 Pams Tender Basted Chicken Drumsticks, defrosted
- 1 cup Pams Honey Soy Simmer Sauce
- 2 tsp Pams Crushed Ginger
- 2 cups Pams Jasmine Rice
- 1/2 bag Pams Superfoods Super Slaw
- 2 Pams Spring Onions, finely sliced
Method
- Place the simmer sauce & half the crushed ginger in a large bowl and mix to combine. Season with salt & pepper. Add the chicken drumsticks and toss to coat. Leave to marinate for as long as you can (put them in the fridge if marinating for any longer than 30 mins).
- While the chicken is marinating, cook the rice as per packet instructions and leave to cool.
- Place the drumsticks on a lined baking tray, shaking off any excess marinade. Bake in the oven at 190°C fan bake for 25-30 minutes, or until cooked through and browned. Alternatively, barbeque the drumsticks over a medium heat for 30 minutes, turning regularly.
- Season the rice with salt & pepper and stir through the remaining ginger and sliced spring onions. Add the superfoods slaw and toss to combine.
- Serve the chicken drumsticks on top of the rice salad.
