Vege Sausage Rolls
This recipe is the perfect meal solution that doesn’t break the bank. Use up those tinned beans or legumes at the back of the pantry for these fantastic vegetarian-friendly sausage rolls.
Tips & Tricks
- Add 1 tsp of dried woody herbs of your choice - we used Mixed Italian herbs.
- Brush milk or egg over the sausage rolls and sprinkle with sesame seeds to make them look amazing!
- For a different flavour combo, try substituting the mushrooms for 150g of mashed kūmara! A quick and easy way to do this is to prick your kūmara all over with a fork and microwave whole for 8-10 minutes. Leave to cook before scooping out the flesh!
Ingredients
- 1 Pams Onion, finely chopped
- 3 cloves of Pams Garlic, diced
- 200g of Pams Mushrooms, diced
- 1 Tbsp of Pams Soy Sauce
- 1 tin of Pams Black Beans, Lentils or Kidney Beans, drained & rinsed
- 2 sheets of Pams Puff Pastry, thawed
Method
- In a medium fry pan, sauté onions on a medium heat for 5 minutes. Add garlic and cook for a further 2 minutes.
- Add mushrooms and cook for 2-3 minutes until they have softened and released their juices.
- Add soy sauce, beans and a good pinch of pepper.
- Using a fork, mash half of the beans in the pan. Simmer on a low heat until the mixture is dry and any excess water has disappeared. Taste, add salt if desired.
- Split the mixture in half and place in a log form in the middle of each pastry square.
- Wet the end of the pastry squares with water or milk, and roll into logs. Slice each log into 6 individual sausage rolls.
- Place the sausage rolls on a lined baking tray, seam side down and fan-bake at 200°C for 25 minutes until pastry is golden and puffed.
